The first love letter;

the humble kuih kapit, a malay/peranakan heritage confection. Starts off with a batter of mostly coconut milk and rice flour poured onto a hot plate to form a thin wafer base. Our grandmothers would bend over hot iron pans to make these fresh in the kitchen with chopsticks during the spring festival — the reason we want to believe is why we also colloquially refer to these as love letters. Because of its shape, today each piece of these confections are still laboriously handmade.

Adding a fancy twist to this heritage snack, we slow roasted pistachio to make a creamy butter which is then folded in to form this indulgent kuih kapit.
